Sippin' through Summer & the 4th of July!



Sippin' through Summer & the 4th of July! I've collected some of my favorite summertime refreshing cocktails or mocktails!





Layered Watermelon Jello Shots Can't get enough jello shots! (Geaux Tigers) STEP ONE: Make the green layer. In a large measuring cup (or mixing bowl with a spout), add 1 cup of boiling water and the green jello. Whisk until dissolved and then add in 1/2 cup vodka and 1/2 cup cold water and whisk again. Pour evenly into small plastic shot glasses (1 oz shown), that have been set onto a tray or lipped baking sheet, filling approximately 1/4 to 1/2 way up. Place the entire tray into the fridge for approximately 30 minutes or until green layer is firm.STEP TWO: Make the next color the same way. In a large measuring cup (or mixing bowl with spout), add 1 cup of boiling water and the pink jello and whisk until dissolved. Add in 1/2 cup vodka and 1/2 cup cold water and whisk again. Let the mixture cool slightly and then pour the rest of the way on top of the set green layer. Place the tray back into the fridge for approximately 2 hours to fully set. STEP THREE: Garnish and serve. Once fully set, add a sour candy to the top of each shot, add the lids and serve! Keep refrigerated until ready to serve.





Pina Colada Ice Pops (Makes about 12 Pops)

  • 2 Cups – Fresh Pineapple-cubed and frozen

  • ⅓ Cup of Coco Lopez – cream of coconut

  • ½ Cup of Unsweetened Coconut Milk

  • 4 oz. White Rum

  • 2 oz. Coconut Rum

  • 2 tbsp. Fresh Lime Juice

  • 3 to 4 oz. Plastic Ice Pops/Popsicles- I got the sleeves on Amazon

In a blender combine all the ingredients and purée. Fill ice pops to right below the seal using a funnel. Seal the pop and put in a vessel that will keep them upright in the freeze. Freeze for at least 5 hours and serve.





Frozen Aperol Spritz Ingredients// Servings: 2

  • 2 cups mango, frozen

  • 6 ounces Aperol

  • 2 ounces prosecco

  • 2 ounces club soda

  • Juice of half an orange

  • 2 cups ice

  • Orange or clementine slices for garnish

Instructions

  1. Add mango and Aperol to a blender and blend until mango is just pureed.

  2. Add prosecco, club soda, and orange juice to the blender, blending until just incorporated.

  3. Add ice and blend until just crushed.

  4. Divide between two cocktail glasses and top with orange or clementine slices if desired. Drink immediately and enjoy!

NOTES For a thicker consistency, pop the mix in the freezer for 15-20 minutes then enjoy.
